PRESERVING HINT:
Preserves should be filled well allowing only a small air space.
Wax disc placed while still warm. Cellophane covers to be taut. Chutneys to be fitted
with a candle or beeswax disc and covered with cellophane or vinegar proof lid.
Dressings should also have a vinegar proof lid. Jar and bottles to have a label with
name, date and year of preserve.
